Ok, so when I started following the Slimming World plan, the first thing I was concerned about in terms of food was what I was going to have for my breakfast. I had always been a toast/bagel girl for my breakfast, and now although this wasn’t off my radar in terms of food, I knew that having toast for breakfast was going to take up a lot of my daily syn allowance.
I needed to look for alternative ideas. I came across Overnight Oats, and I thought I would give this a try. They have since become one of my favourite meals of all time, and I have them most days for breakfast now.
What I love about the Overnight Oats is that they are so tasty, so filling an so easy to make.
I have adapted the Slimming World recipe slightly, but here is how I make mine . . .
1. I chop up the fruit I am going to be using. At the moment I add one banana, one nectarine, some grapes, a few raspberries and some strawberries chopped up.
2. I then weigh out 40g (HEX B) of dried porridge oats, and grab my yoghurt – I use the Tesco 0% Fat Natural Yoghurt, which is syn free on the Sliming World plan.
3. I then layer up the porridge oats, 2 tablespoons of the yoghurt and then the fruit. I do this until I all the fruit is gone. I make mine in a little kilner jar that I got from Ikea – it is perfect for this.
I pop the jar in the fridge overnight, and it is perfect for me to eat the following morning. I totally love my Overnight Oats for breakfast – it is so filling, and keeps me going until lunchtime.
